Founder Aaron Muller found out he had Celiac Disease about two weeks before his 40th birthday. Since then, he has become passionate about creating a safe, delicious dining experience that’s entirely gluten-free.

Roughly two weeks before my 40th birthday I found out I had Celiac Disease. Skeptical, since I had been eating bread for my entire life, I decided to try and eat gluten-free and see how I felt. After only a few weeks it was clear that my body did not like bread. At all.

Did I mention that I am married with 4 children and my favorite food is a hamburger? Fast forward and about 3 months later it became clear that having gluten in the house was problematic. Sprinkling parmesan goldfish on top of SpaghettiOs? No can do. Giving my children kisses after a nice hot slice of pizza? Disaster.

After much research, we found that in my case, we just can’t have gluten in the house. So we moved forward and with the grace and generosity of my family became completely gluten-free. All was well.
Until we went out to eat…

See, the problem for me is simple. My body tries to kill gluten and it doesn’t go so well. Gluten is tiny, in almost everything, and most importantly… cheap. Eating out became a ridiculous dance of making sure the server knew I can’t eat any gluten, then crossing my fingers that all the pans/cooking surfaces/ingredients don’t contain trace amounts of gluten.
